Creamy Boursin Andouille One Pot Pasta

I am a fan of a quick, easy one-pot meal, and this suits. I came across a recipe online that used polska kielbasa, but it's rarely gluten- and soy-free, so I decided to experiment and make it my own. The results were outstanding. Think andouille sausage and Boursin cheese (yes, I know, you’re already in… 🤤)


INGREDIENTS

  • 1 package small shaped Pasta
    lb andouille sausage sliced

  • 2.5-3 cups chicken broth (enough to cover pasta completely

  • 1 pack Garlic & Herb Boursin or Alouette Cheese

  • 1/3 cup of chopped onion

  • 1 teaspoon minced garlic

  • 1 big handful fresh spinach

  • 1/2 teaspoon each Italian seasoning, garlic powder, salt, pepper

  • 2 tablespoons butter


DIRECTIONS

  1. In a large skillet, grill the andouille to heat thoroughly

  2. Add the butter and onion, cook until translucent

  3. Add the garlic

  4. Add the seasonings, and the pasta

  5. Add the cheese

  6. Cover with chicken broth

  7. Cook for 10 minutes until pasta is al dente

  8. Add additional broth if needed

  9. Add spinach, stirring to wilt and get everything mixed

  10. Serve!
